High acyl gellan gum is mainly used in vegetable protein drinks, neutral milk drinks, coarse grain drinks and other products that do not require transparent system. It is used to thicken, suspend and stabilize particles.

Plant protein drinks are mainly made of plant kernels and pulp, with high protein and vitamin content. The application of high-acyl gellan gum in this drinks not only make tastes good, but also has the function of thickening and stabilizing protein. It can be combined with other hydrophilic colloid, such as the synergistic effect of carrageenan, guar gum and locust bean gum to achieve good stability. Often used in walnut milk, peanut milk, cocoa milk, corn juice, mung bean juice and so on.
