Low acyl gellan gum can form transparent thermal irreversible gel, which helps to make layered jelly. Especially in the production of multicolor jelly with different colors and flavors. Just use oil-soluble food colors and flavors, it can produce colorful jelly in red,green, yellow, white, as well as other multi-colored jelly without trouble of color mixing and flavor cross.
